Step 1
Cook Jimenez chorizo Especial in a large nonstick frying pan over low heat, breaking chorizo into crumbles, cook until it starts to brown, about 10 minutes. Leave in oil released from chorizo.
Step 2
In a bowl, beat 6 eggs. Pour egg mixture over cooked chorizo. Stir for egg and chorizo until mixed. Cook on medium heat, cook mixture to scramble.
Step 3
Separately warm up flour or corn tortillas on griddle or microwave. Then fill tortillas with chorizo and egg mixture to create tacos.
Optional: add shredded cheese, fresh cilantro, fresh onion, hot sauce to tacos.
